Alkaline Sea Vegetable Fillet with Double Battered Fried Okra, Green Banana Fries and Salad

  1. In your blender or food processor add Oyster mushrooms and all ingredients except for 4 sheets of nori
  2. Put the mushroom mixture in a bowl and let it sit in the fridge for 5-10 minutes. This will help with the next step.
  3. Lay out your nori sheets. Place mix on top and press down to your desired thickness. I like mine thin so it was less than ½ inch thick of the mushroom mixture.
  4. Using scissor cut the nori sheets into fillets. You should be able to make 4-6 nice size pieces.
  5. Next carefully place the pieces into your dry mix. Be sure to coat the entire piece.
  6. Drop them in your hot oil. Fry the side without nori first for 3-4 minutes or until golden brown and then fry the nori side for about 2 minutes.
  7. Strain and place on a paper towel. Serve immediately while hot.

Double Battered Fried Okra

  1. Rinse, slice, lightly sprinkle with sea salt and onion powder
  2. Dry mix 2:1 ratio Spelt flour Chickpea flour
  3. Wet mix 2:1 ratio Chickpea flour Spelt flour Sea salt Onion powder Batter should be like pancakes
  4. Toss okra in dry mix with one hand and then take the opposite hand drop the okra in the wet mix.
  5. Then drop the wet okra back into the dry mix once more
  6. Fry okra in batches for 3-4 minutes or until they are golden brown.

Green Banana Fries

  1. Cut off the ends of the bananas, make a seam with knife and the peel bananas.
  2. Cut the banana in half and then slice your fries thick or thin.
  3. Lightly toss cut fries in sea salt and then drop them in hot oil, fry for 4-5 minutes and turn them a few times.
  4. Strain and sprinkle with sea salt. Serve while hot.
